How is DōMatcha® Made? 

The whole process of making amazing matcha begins in the tea fields of Kagoshima and Uji, in Kyoto Japan. It’s here where the highest quality tea leaves are grown under shade and selected with the utmost care to ensure that each leaf achieves the peak flavour and nutrients expected by Matcha® and 16th generation Tea Master Kazunori Handa-san who oversees production. All the stems and veins of the leaves are removed after cultivation and since each field and tea cultivator contributes slightly different flavour profiles to the leaves, our Tea Master blends different quantities from each field to create the most sought-after flavours and nutrients you would expect from your favourite cup of matcha tea. 

Now that we’ve collected the best parts of the tea leaves, they now need to be ground into matcha. While most will grind the leaves to under 30 microns, DōMatcha® particles are below 10 microns. This makes it easier for the resulting matcha powder to be absorbed by your body and receive all of the fantastic health benefits that matcha brings to your life. 

Locked in freshness 

If it sounds like a lot of steps, it’s because it is. Making authentic, high quality matcha takes three times longer than other green teas. And with all that effort that goes into making a great matcha, we also want to make sure that it’s as fresh as possible when you open the package. To ensure peak freshness, DōMatcha® uses three levels to protect you newly purchased matcha. First, we place it in a food safe foil bag and vacuum seal it. Then, that vacuum sealed bag is placed in a nitrogen purged can with oxygen absorbing packet that is then sealed shut in Japan before being shipped out by air to our Canadian Warehouse or your favourite local shop as quickly as possible to maintain freshness. 

 

The Results 

So, the best tea leaves have been grown and picked, the process has been overseen by a 16th generation Tea Master, the leaves have been ground to optimal levels, and shipped with the best protection against oxidation available. Was it all worth it? We’re pretty confident that you’ll see the difference as soon as you open the package. You’ll notice the trademark bright green colour of DōMatcha®. When you begin to whisk it together, you’ll experience how easily it blends and develops a nice smooth foam. You’ll inhale the sweet and grassy aromas and taste the perfectly balanced flavours and smooth texture of some of the finest matcha available.
